Pumpkin Latte

Around the holiday season (Halloween, Thanksgiving and Christmas) pumpkin everything becomes super popular. And I love pumpkin, especially pumpkin lattes from my favorite coffee houses! But after finding out how many artificial ingredients go into a pumpkin latte I decided to stop buying them and start making my own version at home which is both healthy and delicious! It is pumpkin pie in a cup! And, it is significantly less expensive too!

I find the amounts below to be to my taste, but you may want to tweak the exact amounts of spices and sweeteners that you use to best please your tastebuds. Also, in order to make this recipe super easy I have basically made it a simple one step process.

Ingredients:

  • 2 T canned pumpkin puree
  • 1 t ground cinnamon
  • 1/8 t ground cloves
  • 1/8 t ground nutmeg
  • 1/8 t ground ginger
  • 1 t vanilla extract
  • 1 T agave (optional)
  • 1 C half and half
  • 1 cup brewed coffee
  • whipped cream (optional)

Method:

In a saucepan, mix all ingredients together over medium heat, stirring constantly, until all of the ingredients are fully incorporated and it comes to a simmer. Pour into your favorite coffee mug and top with whipped cream. Enjoy!

Note:

This would also make a great adult dessert drink. Just spike it by adding in a shot (or two) of rum and/or a shot of Kahlúa.
